These are my favorite enchiladas. I dream about them, and wish I could have them more often. They come from a family-owned restaurant called El Toro Mestizo. Mauricio Cornejo and his family are creating authentic Interior Mexican dishes that showcase the best foods of his native country. The sauce that covers those enchiladas I'm obsessed with is from a small village near Mexico City. The whole town comes together to make mole - the one they are known for all over Mexico. Subtle notes of chili, chocolate and almonds combine to create a complex creation that is like no other mole you've ever had.
Of course, the mole enchiladas are only one of the fantastic items on a menu full of superstars. I was privileged to be allowed to photograph and sample some of their favorites. The chefs agreed to take a moment away from the kitchen to come out and talk with me about their concepts, and how they make everything they cook so incredibly delicious. Listening to their excitement about the recipes and ingredients that have shaped their family culture and heritage for generations was fascinating. I couldn't wait to try everything they made for us.
We absolutely couldn't leave without a bite of their world-famous flan! It is simply the best flan I have ever eaten. Hands down. Thank you to Mauricio and his lovely and very gracious family. I had a blast with this assignment and can't wait to return for the meal of my dreams...
